I grew up as a little girl loving these pancakes. Unlike my cousins, I had front seat to a pancake fest every morning with my grandpa at the griddle until I was 8 years old. Now unlike my cousins, most of them got to learn the recipe and I never did. My grandpa made an attempt, but the recipe was not to be written. Mix it until it looks like this, add enough of this until it is this consistency. And so on. Not even an idea of how much, he just had no idea. He made it by feel.
Now that he has gotten older, he can not manage the cast iron pan, nor can he get the batter made. Well, missing my favorite comfort food, I went searching for the web for a reasonable recipe. Well, I found one. I had to change it to get the taste to what I am used too, but it works. I am still getting the hang of spreading the batter thin and even on the pan.
Here is the recipe that I got the base from recipezaar.com
Serves 4
- 3 eggs
- 1 1/4 c milk
- 1/4 c sugar
mix
- 1 1/4 c flour
- 1/2 t salt
stir until smooth
- 3 T melted butter
- 1 1/4 c milk
stir
Now ladle onto med-low preheated skillet. Rotate pan to cover entire griddle with batter. Let cook, flip and then serve. See griddle below.
